Highland Malt Scotch Whisky
The original Timorous Beastie, immortalised in Robert Burns’ famous Scots poem “To a Mouse” was a timid, little field mouse. Echoing our national bard’s wit, ours is most certainly not for the fainthearted! Timorous Beastie captures the essence of The Highlands; a marriage of the region's finest Malts including Dalmore, Glengoyne and Glen Garioch. It is, of course, proudly without colouring or chill-filtration and bottled at 46.8% alcohol, resulting in an oily, chewy spirit that brings an incredible mouth-feel.
NOSE: Overridingly sweet initially, then warming to floral, light barley and spicy honeyed tones.
PALATE: Opens in a spicy style with fructiferous notes of raisin and a sugary, fudgey character.
FINISH: Subtle yet sweet with a real oaky flavour, hints of milky cereals and late meringue.

REMARKABLE REGIONAL MALTS
The Highland region is geographically the largest of Scotland’s Whisky regions, stretching from just north of Glasgow up to Scotland’s northern-most distillery in Orkney. Unsurprisingly, the vast area produces a diverse portfolio of malt whiskies, but the typically “Highland” whisky profile is lightly floral, and sweetly honeyed, with distinct notes of heather from the Highland landscape.
Apparently, male mice sing love songs to their female counterparts. We’re not so good at the singing, but we do gingerly attempt to write a little ditty now and again, in honour of our Highland Malt Whisky’s namesake.
Timorous Beastie Old Fashioned
You’ll need 5cl Timorous Beastie Highland Malt, 2 dashes Angostura Bitters, 1 teaspoon brown sugar, 2 orange slices, 1 piece of orange peel & 1 cherry to create this super simple yet impressive cocktail.
1. Place the sugar in a mixing glass with the Angostura Bitters, 2.5cl of the Timorous Beastie Highland Malt & the orange peel.
2. Stir well to dissolve all the sugar.
3. Fill your serving glass with ice. Strain your cocktail over the ice, and top up with the remaining 2.5cl of Timorous Beastie. Garnish with the orange slices, orange peel & cherry.
Timorous Beastie and Cinder Toffee
Enhance the spicy, honeyed notes of Timorous Beastie by tasting it with cinder toffee. The sweet, sugary treat will fizzle on your tongue when you sip the whisky, and you’ll unleash the enriched, meringue-like sweetness of the full-bodied liquid. Just don’t tell your dentist!
